zucchini bread recipe

Everyone's zucchini is really producing a lot, so here's a great recipe for Zucchini Bread

4 eggs
2 cups sugar
1 cup veg. oil
3 1/2 cups all purpose flour
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 cup chopped toasted pecans
2 cups grated zucchini, w/skin
2 tsp. vanilla
1 cup raisins
1 cup pineapple w/ juice

Beat eggs, sugar and oil. Use spoon to blend in mixed flour, baking powder, soda, cinnamon and salt. Stir only till moistened and add other ingredients, stirring gently. Pour into two greased loaf pans. Bake at 350 degrees for 60 minutes or use a toothpick to test for doneness. Do not overcook. Slice and spread with cream cheese if desired.

  1. I love zucchini bread! I also want to try this recipe for Zucchini "pineapple" ...
    Ingredients
    18 cups ground zucchini
    1/2 cup lemon juice
    3 cups sugar
    1 (46 ounce) can pineapple juice

    Directions
    1)Bring juices and sugar to a boil.
    2)Add squash and simmer 20 minutes.
    3)Pack and seal in hot jars and lids.
    Makes 12 pints of crushed pineapple. May be used as you would regular pineapple.

  2. I've never heard of Zucchini pineapple. What an odd concept. I guess someone developed that recipe out of some sort of necessity one day. We should get my sister-in-law Lisa to try the recipe and let us know what it's like. Perhaps it could be made in a lesser amount than the recipe calls for.

    Granny, cream cheese on zucchini is an absolute must. In fact, I like a little zucchini bread with my cream cheese. I know Lisa Stephens will agree with that.

  3. Oh, yes I would! Agree, I mean...except for this 'new' healthy eating bent Emily and I are officially on for the next 40 days. Right now it's all about hummus, pita bread, and fresh veggies. I blame my severe cream cheese addiction for bringing me to the brink of obesity. :)

  4. My mom made some last weekend. It was really good. I took it to my in-laws house. We didn't tell the kids is had zucchini in it. They loved it! - Dawn
